  • 2 whole Eggs
  • 3 cup buttermilk
  • 2 tbsp Coca-Cola (preferably Mexican Coke)

  • 2 tbsp baking powder
  • 3 tbsp sugar
  • 1 tbsp baking soda
  • ½ tbsp salt

Preparing the Amangiri Pancake Batter

  • Preheat the oven:Start by preheating your oven to 450°F (232°C). This will ensure the pan isadequately heated for baking the pancakes.
  • Warm up the cast iron pan: Place a small cast iron pan inside the preheated oven. The warmth of the skillet is one of the secrets to achieving the perfect Amangiri pancake.
  • Whisk the wet ingredients: In a mixing bowl, whisk together the whole eggs and buttermilk until they are well combined. Then, slowly pour in the melted butter in a steady stream while continuing to whisk.
  • Add the secret ingredient: To elevate the flavor profile of the pancakes, incorporate 2 tablespoons of Coca-Cola into the wet mixture. Preferably, use Mexican Coke for an authentic touch.
  • Combine the dry ingredients: In a separate large bowl, thoroughly mix the all-purpose flour, baking powder, sugar, baking soda, and salt. Ensure that all the dry ingredients are evenly distributed.
  • Gradually incorporate the wet mixture: Gradually pour the wet mixture into the bowl with the dry ingredients. Mix the batter gently until just combined, making sure not to overmix. It's perfectly fine if the batter remains slightly lumpy.

Cooking the Amangiri Pancakes

  • Remove the heated cast iron pan: Carefully take the preheated cast iron pan out of the oven. It should be nice and warm, ready for cooking.
  • Coat the pan with clarified butter: Add 1-2 teaspoons of clarified butter to the pan and swirl it around to ensure the entire surface is well coated. This will prevent the pancakes from sticking and add a delightful buttery flavor.
  • Ladle the batter into the skillet: Take a large ladle and scoop the prepared batter into the cast iron skillet, filling it only halfway. Keep in mind that the pancake will rise as it bakes, so leaving some space is important.
  • Bake the pancake: Place the skillet back into the oven and bake the pancake for approximately 10-15 minutes. Keep an eye on it and look for a golden brown color on the top surface.
  • Test for doneness: To ensure the pancake is fully cooked, insert a toothpick into the center. If it comes out clean or with a few crumbs, the pancake is ready.
  • Release the pancake: Once cooked, carefully turn the cast iron skillet over onto a plate or towel to release the pancake. If needed, gently tap the skillet to help the pancake each.
