Ingredients
  

  • 1 Cup Creamy goat cheese approximately 10 oz by weight
  • ½ tbsp Fresh tarragon leaves finely chopped, plus more for serving
  • 1 large Egg
  • 1 A large garlic clove minced or run through apress
  • ½ tbsp Fine sea salt
  • Pinch Freshly grated nutmeg
  • 1 Cup Rich crème fraiche
  • 1 sheet All-butter puff pastry such as Dufour's, thawed
  • 1 bunch Vibrant asparagus trimmed to equal lengths
  • 2 tbsp Extra virgin olive oil
  • Flaky sea salt to taste
  • ½ Cup Shaved Parmesan cheese shaved with a vegetable peeler
  • Crushed red pepper flakes To taste
  • Freshly ground pepper to taste
  • 2 tbsp Grated Parmesan cheese plus more for drizzling

Instructions
 

  • Preheat your oven to 425ºF(220ºC). Trim the woody ends of the asparagus to ensure even lengths
  • In a medium bowl, combine the creamy goat cheese, finely chopped tarragon leaves, tangy lemon zest, lightly beaten egg, minced garlic clove, fine sea salt, and a pinch of freshly grated nutmeg. Mix until well combined, aiming for a smooth mixture without visible lumps of goat cheese
  • Line a cookie sheet with parchment paper and place the thawed all-butter puff pastry sheet at the center. Score a ½-inch border around the puff pastry using a sharp knife
  • Spread the goat cheese mixture evenly inside the border you created. Arrange the vibrant asparagus spears on top, alternating their direction for an appealing presentation
  • Brush the asparagus with extra virgin olive oil. If baking immediately, sprinkle grated Parmesan cheese and flaky sea salt on top. If preparing in advance, cover the tart loosely with plastic wrap and refrigerate until ready to bake. Remove the plastic wrap before baking and add the Parmesan cheese and flaky sea salt
  • Bake the tart in the preheated oven until the puff pastry turns golden brown and puffy. This usu takes around 30 minutes, but keep an eye on it after 20 minutes to prevent overcooking.
  • Allow the tart to rest on the cookie sheet for 15 minutes, then transfer it to a cutting board
  • Just before serving, sprinkle freshly ground pepper, crushed red pepper flakes, and top it off with shaved Parmesan cheese and a sprinkle of finely chopped tarragon leaves.
