Eve's Pudding is a delightful and traditional English dessert that combines sliced apples with a light sponge cake topping. 1 ovenproof dish This will be used to bake the pudding.
1 apple corer It can be helpful to remove the cores from the apples.
Mixing bowls and spoons You will need these to combine and beat the ingredients for the sponge topping.
Grater or zester To obtain the lemon zest.
Oven: To bake the puddingat the specified temperature
For the Apple Mixture:
- 500 g cooking apples peeled and sliced or cubed
- 90 g dark brown sugar
- Zest and juice of 1 lemon
For the Sponge Topping:
- 126 g baking spread or butter
- 126 g caster sugar
- 2 eggs
- 126 g self-raising flour
- 1 teaspoon baking powder
Preparing the Fruit Filling:
For Eve's pudding, you will need 500g of cooking apples. Peel and slice or cube the apples.
In a bowl, combine the sliced apples with 90g of dark brown sugar.
Add the zest and juice of one lemon to the apple mixture.
Toss the apples well to ensure they are evenly coated with sugar and lemon juice.
The balance of flavors in the fruit filling comes from the tartness of the apples, the sweetness of the brown sugar, and the tanginess of the lemon zest and juice. The sugar helps to enhance the natural sweetness of the apples while the lemon adds a refreshing citrus note.
Making the Sponge Topping:
In a large bowl, cream together 125g of baking spread (or butter), 125g of caster sugar, and 2 eggs until smooth and creamy.
Gradually add 125g of self-raising flour and 1 tsp of baking powder to the mixture.
Beat the mixture until it forms a smooth batter.
Mary Berry suggests using baking spread instead of butter for a lighter texture in the sponge topping. However, if you don't have baking spread, you can use regular butter instead.
Assembling and Baking the Pudding:
Grease an oven-proof dish and arrange the prepared apple mixture in the bottom.
Sprinkle the remaining brown sugar and lemon zest over the apples.
Spoon the sponge topping mixture over the apples, spreading it out evenly with the back of a tablespoon.
Preheat the oven to 160°C fan/180°C/Gas 4.
Bake the pudding in the preheated oven for 45 minutes, or until it turns golden and feels springy to the touch.
Once baked, remove the pudding from the oven and let it cool for a few minutes.
Serve the Eve's pudding hot with custard or cream as desired.
Optionally, you can garnish the pudding with a dusting of powdered sugar or a sprinkle of cinnamon before serving.
